CHEF MARC TAFT TO DEBUT BRINE SEAFOOD SHACK AT
ALPHARETTA’S AVALON IN SPRING 2017

Southern California-inspired eatery will feature a rooftop tiki bar,
walk-up takeout window

ATLANTA — Executive chef and restaurateur Marc Taft, who brought the ultra-successful farm-to-table restaurant Chicken and the Egg to Marietta in 2011, is now adding a fresh seafood alternative to Alpharetta with Brine Seafood Shack. The latest from Taft’s Southern Fried Hospitality is set to debut this spring in the super-hot Avalon retail complex.

The restaurant’s Cape Cod-meets-Santa Monica menu was inspired by Taft’s time spent on the West Coast. “I’ve always been enamored of how Southern California does seafood,” says Taft. “It’s fresh, it’s healthy and there’s a laid-back vibe. It always feels like a vacation getaway. That’s exactly the kind of relaxed environment we want to bring to diners at Brine.”

On the menu: think really good lobster rolls, fish stew, clam fritters, tuna poke, fresh oysters and fish tacos, all overseen by Taft and Brine chef de cuisine David Connolly, previously of Two Urban Licks and Tap in Atlanta and Michelin-starred Spiaggia in Chicago.

A rooftop bar will feature fresh, tiki-style craft cocktails served next to fire pits under a retractable roof.

Downstairs, a raw bar and classic boat drinks are on the menu. For diners on the go, there’s a walk-up window inspired by New England clam shacks where you can grab takeout, soft serve ice cream, milkshakes and even cocktails, wine and beer to enjoy while strolling through Avalon.

Brine’s seafood will follow the sustainable practices outlined by the Monterey Bay Seafood Watch, the nonprofit dedicated to empowering consumers and restaurants to make choices that result in healthy oceans.  Much of the seafood from New England, the West Coast and the Gulf region will be geo-tagged so Brine chefs know precisely where the fish was caught, down to the captain’s name and boat.

“Just like at Chicken and the Egg, we’re dedicated to bringing only the finest-sourced ingredients to our customers at Brine,” says Taft. 

The 150-seat Brine Seafood Shack, designed by Jay George, is located in phase two at Avalon in Alpharetta.

ATLANTA - Growing up in Alabama, Marc Taft loved two things — the Atlanta Braves on TV and his grandmother’s juicy fried chicken. Now, the chef and restaurateur behind Marietta’s popular Chicken and the Egg is bringing his signature dish and some favorite Southern sides to The Battery Atlanta, the new live-work-play development adjacent to SunTrust Park, the brand-new home of the Atlanta Braves. FEED – Fried Chicken & Such is being readied to debut in March 2017, a month before first pitch.

“Some of my favorite childhood memories revolve around a plate of my grandmother’s fried chicken, mashed potatoes, fresh pole beans and a warm biscuit or a hunk of cornbread,” says Taft. “In the South, fried chicken is practically a religion. It needs to be treated with respect, and that’s our mission at FEED.”

In addition to buckets of chicken, fried chicken tenders and Nashville hot chicken, FEED features other Southern favorites, including North Carolina catfish, Texas-style country fried steak, meatloaf, braised greens, macaroni and cheese, green beans and fried green tomatoes, all made from scratch. There will also be healthier options including grilled chicken and salads. Desserts will include soft serve ice cream, milk shakes, pies and other fresh baked treats.

“Our goal is to serve families a supper that tastes like the chicken I watched my grandmother fry up in her cast iron skillet each Sunday and for church socials,” says Taft. “It’s about starting with the highest quality chicken, using a unique brine and seasoning, and adding her special ingredient, love.”
While FEED will offer fast counter service on game days, diners coming for lunch and dinner the rest of the year can enjoy a more relaxed, full-service dining area as well. Thanks to The Battery Atlanta’s open container policy, beverages from the fully stocked bar can be taken outside the restaurant walls.
The 3,000-square-foot space designed by Jay George will evoke memories of the rural roadside eateries Taft ate at when traveling between Alabama and East Tennessee as a kid to see his grandmother.

Chef-Inspired Doughnut Shop Offers Kosher Sweets for Neighboring Jewish Community 

ATLANTA – As if eating at Sublime Doughnuts wasn’t already a divine experience, the North Druid Hills bakeshop is now also kosher. The Atlanta Kosher Commission (AKC) recently granted this location of Sublime Doughnuts with a kosher certification, making the shop’s beloved doughnuts and treats such as the A-Town Cream more accessible to those with dietary restrictions.

Located at 2566 Briarcliff Road NE in The Village at Druid Hills, the specialty doughnut shop’s surrounding Toco Hills neighborhood has a large Orthodox Jewish population. Sublime’s founder Kamal Grant was encouraged to seek out kosher certification in response to customer requests.

Atkins Park Restaurant & Bar is proud to be recognized as Atlanta’s oldest continuously licensed tavern, and the Virginia-Highland neighborhood restaurant is spreading some serious holiday cheer by celebrating the 11th anniversary of its annual Santa Ride.


What:                      
Oh what fun it is to ride! The eight-mile Santa Ride is a social event that honors both the holiday season and Atkins Park’s owner, Warren Bruno, who lost his battle to lymphoma in 2012. Cyclists of all skill levels are invited to dress up like Santa, Mrs. Claus, one of Santa’s elves, Rudolph or anything else that strikes their holiday fancy and decorate their bikes with lights and garland for a ride through Atlanta’s intown neighborhoods. The route takes riders on a tour of North Highland Avenue, Ansley Park, Peachtree Street and more of the city’s most beautiful areas and includes rest stops at Steamhouse Lounge and a private residence for additional cheer. The ride will move at a slow and social pace; all riders will finish together.


Be sure to come dressed in your best festive attire because this year’s event features a costume contest after the ride, and all participating cyclists will vote on a winner to be awarded the much desirable Warren Bruno holiday bike.

This fundraiser benefits the Leukemia & Lymphoma Society, Bruno’s charity of choice. There is no official entry fee, but a $25 minimum donation to the Leukemia & Lymphoma Society is suggested. Those who donate will receive a ticket for a free beer at Atkins Park.

MARLOW’S TAVERN CELEBRATES THE SEASON WITH CREATIVE COCKTAILS AND NEW FALL DISHES
Classic Cocktail Techniques Made Modern at Atlanta’s Favorite Tavern

ATLANTA– To help guests drink in every moment of the fall and holiday seasons, Marlow’s Tavernis introducing new features on both the food and drink menus beginning Nov. 15. Rick Blumberg, Marlow’s manager of adult beverages, research, development and purchasing, has taken classic cocktail techniques from some of the first taverns in the world and given them a modern twist to create a cocktail lineup that combines one part creative, one part classic and one part seasonal.

One example is the house-made sour mix in Marlow’s new house margarita. “Historically, citrus was limited, so bartenders used the rinds to magnify the flavor,” informs Blumberg. “We’ve gone back to their technique of combining citrus rinds with sugar to craft the citrus oil used in our house-made sour mix. We’re also using fresh, seasonal blood oranges in our blood orange margarita.”

While Blumberg is eager to pay tribute to the good ol’ days, he’s equally excited to mix it up with contemporary trends. “Fortified wines like sherry, madeira and port have gained popularity as cocktail ingredients,” he says. “The Victorian features Michter’s Rye, Fonseca Bin 27 Port as well as Plantation Pineapple Rum, which has only recently become available for sale in the U.S. This drink is based on The Suburban, a classic cocktail popular in the 1860s.”

Additional sips new to the menu include:
  • The Barrel Aged Scrappy Old Timer – Old  Forester, Suze Apéritif, Cocchi Torino Vermouth and Scrappy’s Orange Bitters
  • The Orchard Conformist – St. George Straight Vodka, apple cardamom shrub, Bar-Keep Apple Bitters and simple syrup
  • The Southern Crush – Aviation Gin, fresh lemon, Jack Rudy Grenadine topped with a splash of club soda and fresh pineapple
  • Three Hour Tour – Clément Select Barrel Rhum, Coopers Craft Bourbon, agricole, Velvet Falernum and fresh lime
Blumberg has built strong relationships with local wine distributors like Ali Banks of Terroir Life and Boo Beckstoffer of Tuck Beckstoffer Wines to feature some unique wines from their portfolios. These include The Seventy Five Wine Company’s Sum Red Blend and Mulderbosch’s Cabernet Sauvignon Rosé.

Meanwhile, Marlow’s executive chef and co-founder John C. Metz is bringing the robust flavors of fall to the food menu as well. “Our Rustic Grilled Cheese with Havarti, Swiss, classic Mornay sauce and applewood smoked bacon on chili-slathered sourdough will warm guests through and through,” he assures.
The new menu also features:
  • Scallion Crusted Salmon – grilled Atlantic salmon, blazed with poke sauce, roasted sweet potato, shitake, kale, squash and miso broth

ATLANTA CHEFS AND MIXOLOGISTS PREDICT 2017’S TOP CULINARY 
AND COCKTAIL TRENDS
More Veggies, Less Meat, Smartphone Ordering and Tastier Takeout on the Menu 
in the Coming Year

ATLANTA- As 2016 draws to a close, it’s time once again to break out the culinary crystal ball and ask some of the Atlanta area’s best chefs, mixologists and restaurateurs what big trends are in store for 2017. Get ready for more locally sourced vegetables, more (and better) meal delivery options and cocktails on tap. Oh, and did we mention lasagna cupcakes? Read on!

Red Beard Restaurants chef/owner Kevin Gillespie sees chefs zeroing in on the thing they do exceptionally well. “We’ll continue to see more specialization with restaurants that serve one thing or have a very limited menu. I also believe the time of the big restaurant will draw to a close, and we will see restaurants scale down in size,” he says.

Executive chef Matthew Ridgway of Gypsy Kitchen agrees, predicting smaller restaurants “focused on a simpler ‘bistronomy’ style of cooking that puts the emphasis on the food and flavor.”

Like many in the industry, Doug Turbush (Seed Kitchen & BarStem Wine BarDrift Fish House & Oyster Bar) is keeping an eye on skyrocketing meat prices and sees chefs turning to alternative cuts, along with “the creative use of vegetables.”

Southern Fried Hospitality’s Marc Taft is also looking at alternatives to protein, “maybe mixing mushrooms with beef for burgers” and also predicts “vegetables will take center stage.”

Dolce Italian chef Paolo Dorigato sees a sprouting love affair with fresh vegetables and less reliance on meat as a fresh opportunity for creativity. “It will be a priority for the chef to create something good and accessible at reasonable prices. Menus will have more seasonal vegetables and fewer proteins,” he predicts.

Naturally, with a renewed emphasis on locally sourced vegetables, the bond between farmers, chefs and diners will grow even closer. According to Ormsby’s chef Nick Anderson, “Farmers markets are going to blow up, becoming more popular than they already are. More farmers are going to be coming to the markets to supply demand.”

Bellina Alimentari creative director Alice Fabi agrees. “The relationship between the chef and the farmer is becoming crucial, giving both parties the possibility to work more creatively and efficiently together. Chefs are becoming storytellers, going to the source of ingredients and interpreting what is in season directly from farm to table.” 

Revival chef Andreas Müller even sees restaurants sourcing products from their own farms. “This is happening right now on a small scale. I also see a bigger partnership between restaurants and farmers. For example, a smaller local farm growing greens and vegetables for one restaurant only,” he says.

With takeout windows and home delivery becoming more of a weeknight option for time-starved hungry diners, Gypsy Kitchen’s Ridgway predicts more chefs will turn their attention to this growing consumer need “but using really good ingredients alongside an increasing mix of ethnic ingredients.” 

As food delivery grows, Southern Fried Hospitality’s Taft says chefs “need to create food that travels well and be able to capture the art of presentation in the foods that are delivered.”

Jamie Lynch of 5Church thinks chef-inspired meal kits are going to take off. “People can put together some of their favorite chef’s dishes at home. There are a couple of kits I’d like to grab for myself, just to see how they do it!”

HOBNOB Neighborhood Tavern director of operations Mark Nelson foresees growth in walk up ordering and delivery as well as a return to more casual restaurant environments and a more technologically wired customer. He says, “Smartphone technology will allow guests to order another drink or place their own food order.”

Johnny’s Hideaway owner Chris Dauria also predicts an uptick in mobile device ordering “but not at the Hideaway!”

Ormsby’s Anderson sees some ethnic role reversals on the menu for 2017. “Asian restaurants are going to start doing American takeovers, like Korean barbecue doing Southern barbecue ribs. With all these American restaurants serving pop-up ramen, I just see a resurgence.” 

American Cut executive chef John Adamson is excited about “an emergence of ultra-regionalized ethnic food.”

On the cocktail front, Marlow’s Tavern’s Rick Blumberg sees more wine and cocktails on tap in our imbibing futures, plus cocktails enhanced with fortified wine. “I think we will continue to see more sherry, Madeira and port cocktails,” he adds.

Ben Yabrow of Himitsu says guests are moving toward more refreshing drinks rather than the boozy and stirred variety. He says, “I've also noticed more people putting their faith in the bartender's judgment. It's exciting.” 

Sublime Doughnuts founder Kamal Grant predicts our palates will get spicier, and our hunger for savory/sweet combinations will grow in 2017. “Spicy foods will continue to trend, thanks to the popularity of Sriracha. Americans’ tolerance for heat has increased, and they want more. The sweet and savory combo is another trend I see continuing. Things that are traditionally sweet but made in a savory style or vice versa. For example, a doughnut filled with salad, vegetables or meats or lasagna cupcakes.”

As you attempt to digest the idea of a lasagna cupcake, here’s a parting wish from Ormsbys' Anderson: “I believe 2017 is going to be so much better than 2016. I mean, just get lost already, 2016!”

ATLANTA CHEF KEVIN GILLESPIE ANNOUNCES GAME-CHANGING GRILL:
KUDU SAFARI BRAAI TO DEBUT THIS FALL

Gillespie Joins Founding Partners for South African-Inspired Live Fire Cooking System
ATLANTA (Nov. 3, 2016) – Few are better qualified to blow the lid off the American barbecue experience than Atlanta chef, restaurateur, speaker and cookbook author Kevin Gillespie, a guy who titled his first cookbook “Fire In My Belly.” Beginning today, Gillespie has joined founder Stebin Horne and his business partner, Stewart Vernon, as owners of the brand new, innovative KUDU Safari Braai outdoor live fire cooking system. The KUDU is a multifunctional grill, griddle and fire pit combined; a heavy gauge steel dream come true for backyard fire enthusiasts.

“I love cooking over live fire,” Gillespie explains. “With the KUDU, you are cooking without a lid and regulating the heat by creating distance from the heat source. You can cook on multiple surfaces simultaneously. From a culinary standpoint, I have yet to discover something I can’t do on it!”

A few months ago, Kevin was introduced to KUDU creator Stebin Horne and the two entrepreneurs immediately bonded over barbeque. Horne explained that after spending six months with his South African-born wife in her native country, he learned firsthand the communal cooking technique called braai. Local farmers weld a cooktop to their old disc ploughs to cook for friends and family in the backyard. Returning home inspired, Horne, a University of Georgia and Mercer Law graduate, was awarded a fellowship from the Mercer Innovation Center to introduce the cooking concept in the United States. After partnering with Vernon, Horne’s dream came alive.
“Stebin had a great idea and brought it to life,” says Gillespie. “Then Stewart stepped in and made it even bigger. They realized that they needed an expert in the grilling arena. That provided me with the opportunity to join up with this Georgia-based company and help create my ultimate cooking system.”

“We began with a $75,000 Kickstarter campaign,” notes Horne. “We raised that money and then exceeded the goal, thanks to the enthusiastic grilling community we reached. Our first supporters have already received their KUDUs and are raving on social media and in notes to us!

Horne, Gillespie and the KUDU team will use their access to Mercer’s engineering students and faculty to create new add-on accessories for the grill so patio chefs can fry, boil, steam and roast their favorite foods as well.
“Being part of the creative evolution of this product really appeals to the engineering nerd in me,” says Gillespie. “The users and the developers will be on the journey together. As novice cooks become more skilled on the KUDU, they can simply add on to their existing grill without trading it in for a new one.”

Made of heavy gauge steel, high-temp powder coating and stainless steel fasteners, the KUDU is designed to last a lifetime. While similar professional grade wood-burning grills can cost as much as $5,000, the KUDU is being introduced at the affordable price of $750.

For Gillespie, a guy who created a backyard beer garden called Communion, inviting your friends to be a part of the grilling fun was a huge selling point. “As fast as it is, the KUDU will never cook your food as fast as a gas grill, and that’s the point,” he says. “Sometimes the journey—that time spent with your family and loved ones—is more important than the destination.”

The KUDU experience will include a tremendous amount of online content, such as videos of Gillespie showing everything from initial setup to firing up as many as six cooking surfaces on the grill simultaneously before transforming it into a late-night fire pit for guests. There will be tutorials, recipes, KUDU accessories and gear, along with an interactive KUDU Nation to provide consumers a place to interact with other KUDU users.”

“At first glance, the KUDU can look a little intimidating,” Gillespie concedes, laughing. “This is definitely not for the set-it-and-forget-it home cook. This is for a patio griller who wants to enjoy that cinder smoke, the scent of wafting wood burning across your backyard and how that results in a phenomenal flavor profile. I don’t put my name on a lot of products, but I’m proud to attach my name to the KUDU.”
