Stem’s second anniversary wine dinner on Nov. 2 begins with gougère and canapè hors d’oeuvre, after which diners will enjoy Maine scallop crudo paired with a 2010 Iron Horse Wedding cuvée; sablefish with red miso and pommes salardaise paired with a 2012 Pinot Noir from Shea Wine Cellars; bacon-wrapped rabbit saddle with a 2001 La Rioja Alta "Gran Reserva 904" Tempranillo; Snake River Farms wagyu beef rib-eye cap with a 2012 Meyer Cabernet; and a molten chocolate tart with hazelnut tuile and vanilla bean ice cream in a port reduction, paired with a Sandeman 30-year-old tawny port.

“Each of the wines we are serving during this dinner comes from our exclusive stash here at Stem,” says Jason Raymond, the restaurant’s general manager and sommelier. “An anniversary dinner is a perfect way to thank guests for making Stem a success and to introduce newcomers to the delicious food and wine we’ve become known for.”

Sweet Auburn Barbecue Spices Up Week Nights
Poncey-Highland restaurant introduces new weekly programming series

ATLANTA – Sweet Auburn Barbecue (BBQ) is welcoming autumn by introducing a new series of weekly specials at its Poncey-Highland restaurant. The new programming, which is currently in place, offers something for everyone, from families to those flocking to Sweet Auburn’s bar, with a series of promotions ranging from barbecue to bourbon. 

Pig & Pint Mondays
During Pig & Pint Mondays, Sweet Auburn matches two favorites: barbecue and beer with an $8 pairing. Available only in the bar, the special features the signature Texas sandwich with the choice of pulled pork or chicken sandwich and a select draft beer. Additional beers may be purchased from Sweet Auburn’s extensive draft and bottled beer list and a combo with the smoked brisket sandwich is available for an additional $2.

Kids-Eat-Free and Taco Tuesday
Two’s the lucky number! On Tuesdays, Sweet Auburn BBQ offers tallboys of Pabst Blue Ribbon beer, shots of Evan Williams and Auburn tacos, pulled pork tacos topped with pear slaw, for $2 each. For families, Sweet Auburn’s kids-eat-free Tuesday offers one children’s meal per every adult entrée purchased.

Wu-Tang Wednesday
Named after Sweet Auburn BBQ’s ever popular chicken wings, Wu-Tang Wednesday features an all-you-can-eat wing menu for $15 per guest. All four preparations of Sweet Auburn’s smoked wings: sweet and spicy Wu-Tangbuffalobarbecue and coconut lemongrass are offered on Wu-Tang Wednesday.

Bourbon Thursday
Start the weekend a few hours early with a $6 cocktail menu at Sweet Auburn. Beverage director Blake Carter has crafted a bourbon-focused menu of specialty cocktails, sponsored by Four Roses Bourbon, offered only during  Bourbon Thursday. All crafted with Four Roses Bourbon, highlighted cocktails include the “de leon,” a blend of Dolin Rouge, Dolin Blanc, Angostura bitters and cherry bark bitters, “the exposition,” a blend of Dolin Rouge, Luxardo and lemon and Sweet Auburn’s signature “don’t burn the house down,” maple syrup, creole bitters, black walnut bitters and smoke.

In addition to the above evening specials, Sweet Auburn BBQ has introduced a lunch special and continues to offer its ever-popular Sunday brunch buffet: 

Weekday Lunch

The combined amount raised from all three events this fall was $100,000, putting the partnership's grand total well over $600,000 since inception.

Annual Food and Wine Event in Idyllic Serenbe Community to Raise Funds for Local

ATLANTA– On Sunday, Nov. 8Atlanta Les Dames d’Escoffier International (LDEI|ATL) will host the city’s most memorable food and wine tasting event - Afternoon in the Country, held at the Inn at Serenbe and presented by Lexus. Although Atlantans look forward to this fall affair every year, 2015’s Afternoon in the Country promises even more top culinary talent to celebrate the fête’s 15th anniversary.

From 1 to 4 p.m., attendees will enjoy more than 100 tasting stations from Atlanta’s finest chefs, such as Gerry Klaskala of Aria, Shaun Doty of Bantam+Biddy and Chick-a-Biddy, Joey Ward of Gunshow, Andreas Müller of Revival and Matthew Ridgway of The Southern Gentleman paired with the area’s best farms, along with fine wines and premium micro-brews. These stations will be set up under festive big-top tents in the beautiful gardens surrounding the Inn at Serenbe for a picturesque backdrop. Additional entertainment includes live music, a cake raffle featuring sweets from the city’s most talented pastry chefs, hayrides, children’s activities and an extensive silent auction offering exclusive dining and travel packages, food and wine merchandise and original art from prominent local artists.

Proceeds from Afternoon in the Country benefit Georgia Organics, Wholesome Wave, Global Growers Network, The Giving Kitchen, The Wylde Center, The Atlanta Community Food Bank and LDEI|ATL’s scholarship fund for women in the culinary, beverage and hospitality arts. Last year’s event raised over $118,000 for these beneficiaries.

EXECUTIVE CHEF MATTHEW RIDGWAY'S IMAGINATION SPARKS NEW MENU ADDITIONS TO SPICE TRADE-INFLUENCED SPANISH CUISINE AT GYPSY KITCHEN 
The Shops Buckhead Atlanta Restaurant to Offer Flavorful New Dishes and Culinary Adventures

ATLANTA – Tradition doesn’t have to be static. At least, that’s Matthew Ridgway’s philosophy. The executive chef of Gypsy Kitchen is putting his philosophy into practice with the introduction of new menu items at the Buckhead restaurant known for offering diners a rich taste of Spain’s diverse culinary repertoire.

“When I came on board in late spring, my first priority was to establish a strong team foundation. All the while, we were experimenting with new recipe ideas," says Ridgway. "While the recipes are new, my focus is the same as it has been at every kitchen I've led - to create clean, simple dishes that are interesting without being too far-fetched. Our chickpea pancakes, for example, combine little more than chickpea flour, eggs and oil, but they are delicious.”

Ridgway is eager to see the look on diners’ faces when they bite into his lamb tartare with radish and walnut raita. “I’ve been making some version of lamb tartare for 20 years with different flavor pairings," he notes. "This slightly sweet rendition is simply prepared and has a much smoother flavor than beef tartare. The quality of the lamb and olive oil are critical to making this dish work.”

New items on the Gypsy Kitchen menu include the following:

In addition to the new menu items, Ridgway will be featuring a few out-of-the-ordinary culinary adventures to be known as the "Gypsy Kitchen Experiences."  The three-course meals, which must be ordered one week in advance, are served family-style for six to eight diners and will be available early 2016.  Guests will choose from lobster and seafood paella, whole suckling pig or a Moroccan lamb shoulder tagine as their entrée, and the other two courses will consist of seasonal appetizers and salads.

"One of the things I love about the South is the diversity of produce grown here and the longer growing season," Ridgway enthuses. "With pumpkin season upon us, I know we’ll be serving a Spanish-style roasted pumpkin salad. As soon as I hear Gold Rush apples are available, which have a rich, musty flavor unlike any other variety, you can bet they’ll be making their menu debut.”

“Bite the Pig” and the grilled cheese wine dinner are the next events in Bite’s series of monthly programming. North Carolina Chef Joe Kindred Starring in Season Finale of Popular Dinner Series

ATLANTA– Gunshow, chef Kevin Gillespie’s nationally acclaimed Glenwood Park restaurant, is wrapping up its 2015 "Hired Guns" series with a grand finale befitting the stellar season of top talent and dynamic dishes guests have enjoyed thus far.  Joe Kindred, chef and co-owner of namesake Kindred in Davidson, North Carolina, will grace the Gunshow kitchen on Tuesday, Nov. 17 and Wednesday, Nov. 18 with his award-winning, contemporary take on Southern cuisine.

Kindred - the restaurant - opened in February 2015 and was quickly named one of Bon Appetit magazine’s top 10 new restaurants of the year.  Kindred - the chef - has been on the cooking scene a lot longer. He did so well in his Davidson high school’s culinary program that he won a national cooking competition at 18, earning a scholarship to Johnson and Wales in Charleston, South Carolina. He gained restaurant experience and met his wife, Katy at The Pump Room in Chicago, eventually moving to San Francisco to work at acclaimed restaurant Delfina. The lure of home brought the Kindreds back to North Carolina, where Joe joined chef Jim Noble's Charlotte restaurant empire and was named 2013 "chef of the year" by Charlotte magazine.

Now, the culinary couple has realized their dream of opening their own restaurant, winning a restoration grant from the town of Davidson to restore the historic building that houses Kindred. "Joe is very focused on community, from the guests he serves to the local purveyors he sources ingredients from. Everyone who meets him sees that unwavering commitment," says Gillespie. "He's a real chef's chef, elevating the team around him to create something special."

Kindred is an avid fan of sports and the teamwork involved. In fact, his focus on camaraderie is a trait that serves his restaurant team well. "I played sports growing up, and being part of a team was always something that I enjoyed," he says. "Being in a kitchen is like going to battle with your best buds and just cooking delicious food. I'm humbled by the opportunity to come to Atlanta and work with the Gunshow team.”

Gillespie and Gunshow's executive chef Joey Ward are ready to have their friend Kindred join them on the front lines in November.  Gunshow guests will be the clear victors, enjoying dishes such as lamb tartare, uni aïoli, katsuobushi with seeded toast and chicken thighs and baked egg, crispy rice, chimichurri and hominy.

"Joe has been getting much-deserved attention around Charlotte and from national food writers because he knows how to present a sophisticated, contemporary menu in a warm, approachable way," says Ward.  "Our guests are in for a real treat."

"Hired Guns" brings top talent like Kindred to town to flex their creative muscles. The guest chefs create dishes to serve alongside the restaurant’s regularly featured items, sharing their signature flavors and personalities with restaurant guests. WHITE OAK PASTURES TURNS ZERO WASTE PRACTICES INTO PET FOOD AND CHEW
Georgia’s Largest Organic Farm Helps Consumers Emulate Natural Feeding for Companion Animals by Creating Convenient Raw Whole Pastured Poultry Line

ATLANTA – Given the way White Oak Pastures, a family-run farm in Bluffton, Georgia, humanely raises 10 species of animals, it’s no surprise that the farm is now offering an all-natural line of food and chews for pets. In addition to being the most diverse farm in the South, White Oak Pastures is also known for its closed-loop farming practices and zero waste protocol that now also benefits a new type of customer: the four-legged kind.

“We continue to learn more about how to manage our by-products, and pet food processing is our latest endeavor to utilize offal and also echo how dogs and cats have always fed themselves in the wild,” says Will Harris, a fourth-generation cattleman and White Oak Pastures’ owner. “We are excited to provide pets with something like they evolved eating, like their ancestors ate.”

All animal blood, bones and eviscerate were previously composted to make organic fertilizers to be used as soil amendments for the farm’s Certified Organic pastures and garden. Now, White Oak Pastures is turning them into chews and raw pastured poultry grinds for pets.

The success of the pet chews, which range from best sellers like the rawhide chews, tracheas and cow pizzles to pet marrow bones and rabbit feet, led the farm to explore additional products. With the help of Whole Dog Market, a strong supporter of the farm, White Oak Pastures has recently introduced three varieties of raw meat blend pet supplements made from its pastured poultry: guinea fowl, duck and chicken.

“The purpose of our blends is to provide a convenient option for customers feeding raw. We are not selling a complete diet, but more so, a raw supplement like what animals would have hunted for before kibble,” explains Amber Reece, who creates White Oak Pastures’ pet chews and also manages the farm’s egg candling and packaging, tallow soap making, hide tanning and leather making.

The farm’s pet food is processed in the same manner that its ground beef or ground turkey is made, only with the addition of organs and bones to create a delicious raw ground product. Because the raw meat blends and chews are made on premises like all of White Oak Pastures’ other products, they meet all the same standards that the farm’s human food meets, including Certified Humane, Certified Grassfed and Animal Welfare Approved.

The main benefit of White Oak Pastures’ chews is the lack of preservatives used. While larger commercial pet product companies often use chemicals to remove the moisture and other preservatives, White Oak Pastures uses sunlight for their rawhides and a dehydrator for all other chews.

“All of our rawhides are cut by hand, soaked in a sodium hydroxide and water solution to remove the hair, stretched and dried in the sun," explains Reece. “The other chews—like the cow trachea, esophagus and ears—are all dehydrated for 24 to 36 hours. We don’t use any type of fillers; our pet chews go straight from the animal to the consumer.”

Although the farm's current pet-friendly options are mostly geared toward dogs, White Oak Pastures’ director of operations Brian Sapp says cat treats are something they are working on for the future. The farm is also looking to offer a raw goose meat blend this fall.

GUY WONG’S NEW LE FAT FALL MENU REFLECTS HIS PERSONAL INTERPRETATION OF VIETNAMESE FLAVORS
New offerings include addictive chili garlic prawns and a hearty thit kho bowl

ATLANTA - With a new chef-driven menu for fall just introduced at Le Fat, Guy Wong is deepening his culinary conversation with diners at his West Midtown Vietnamese brasserie. “Early on, I wanted to introduce people to the classic traditional dishes that I grew up eating; recipes that were cooked by my mother,” Wong explains. “Now that we’ve settled in and are becoming a part of this neighborhood, I want the menu to reflect my personal interpretation of Vietnamese food.”

The chili garlic prawns entrée is one of the new dishes Wong is eager for diners to try. It features local Georgia prawns stir-fried with roasted garlic, onions and chili oil. Another new chef favorite is the thit kho bowl, brimming with caramelized pork belly, pickled mustard greens, braised egg and grilled scallions. “It's a true comfort dish,” says Wong. “I slow braise pork belly for eight hours and then caramelize it for three hours. I pickle mustard greens for five days. It’s a warm, satisfying dish for this time of year.”

The fall menu’s drunken noodle entrée, Wong’s flavorful take on another of his childhood favorites, is made with high-quality angus flank steak and fresh noodles that Wong is sourcing from a mom and pop shop in Philadelphia’s Chinatown neighborhood and having delivered twice weekly to Le Fat.

Wong also has a special treat for early evening diners - the delicious banh mi bao appetizer filled with pork belly, carrot and daikon and accented with cilantro and jalapeño is available from 5 to 7 p.m. nightly. The dish is one Wong first began experimenting with at Miso Izakaya, his Old Fourth Ward Japanese tapas and sushi eatery. Wong explains: “I created it a few years ago and thought it would be amazing to one day serve it in a Vietnamese restaurant; here we are today.”

Even with all the adventurous new tastes on the menu, early Le Fat favorites, including the clay pot chicken (served in its signature sizzling pot), Wong’s famous rotisserie chicken (half lemongrass chicken served with ginger scallion oil and jasmine rice), bo luc lac “shaking beef” entrée and the chef’s acclaimed pho noodle dishes aren’t going anywhere.

For Wong, Le Fat’s new fall menu is a way to advance his dialogue with diners as the restaurant’s culinary offerings evolve. “This menu reflects me as a chef,” Wong says. “I am creating Vietnamese food from my own experience and history. It was personal before because it was my mother’s recipes, but now it's my take on it. Creatively, I always want to try new things. Plus, when my mother comes in for dinner now, there will be something new on the menu for her to try!”
